Our source, Burlap and Barrel, partners with a single family-owned fabrica (estate) in the Extremadura region of western Spain, which has a Designation of Protected Origin status in the European Union. The taste has been described as unique - a combination of hardwood smoke, ripe tomato and summery sweetness.
